When Mother Nature delivered the mother-lode of Lilly Pillies from our distillery tree, we knew only an Old Tom gin would provide the sweetness to balance out the tartness of those berries. We’ve chosen lemon, orange and grapefruit for the base whilst keeping the strength slightly lower to showcase both the floral and the citrus notes of the gin.



Signature Serve

Pair with Fever-Tree Indian Tonic and garnish with a mint sprig to allow the surprising characteristics of our Lilly Pilly Old Tom to shine through.



Swan Valley Sling

In the depths of Covid, our thoughts drifted to simpler warmer times. There’s something about the fresh sea air, hawaiian shirts and drink-inspired festivals that bring sunshine into our lives. Instantly we knew that our Lilly Pilly Old Tom would provide the perfect base for a Swan Valley take on the classic Singapore Sling. Close your eyes, sip and chase those tropical vibes.



30ML LILLY PILLY OLD TOM GIN
60ML PINEAPPLE JUICE
12.5ML LIME JUICE
5ML GRENADINE
SODA WATER
GARNISH: HALF LIME WHEEL 

Place gin, pineapple juice and lime juice in an ice-filled cocktail shaker.
Shake well.
Pour into an ice-filled tall glass.
Top with soda and grenadine, giving a little stir to blend.
Garnish.



Lilly Royale

Old Tom gin and the Champagne Cocktail - not much time separates the creation of these two classics. So naturally, we felt it was only appropriate to bring them together again to deliver a twist on one of the oldest cocktail recipes. Our Lilly Royale delivers a dry, yet fancy version of the classic and deserves the finest of your champagne flutes.



20ML LILLY PILLY OLD TOM GIN
90ML CHAMPAGNE
1 SUGAR CUBE
2 DASHES OF ANGOSTURA BITTERS
GARNISH: ORANGE TWIST 

Place the sugar cube in a chilled champagne flute.
Add dashes of bitters.
Add gin to flute.
Gently pour chilled champagne.
Garnish.
