gins. This month’s selection
is the brainchild of one of our
emerging recruits, who boasts
a sweet tooth, a subsequent
love of desserts and a knack for
crafting citrus gins – which just
happen to be the perfect way for
a burgeoning distiller to kick off
their career. Key limes are known
for being markedly fragrant and
sweet-smelling, are a perfect
ingredient for the refreshing
pie they’re most known for, and
for which this month’s gin gets
its name. Key lime pie is the lime
equivalent of lemon meringue
pie, is as tasty as it sounds; we’ve
captured its essence, and shifted
it from the dessert table to behind
the bar. Best of both worlds,
right there.
The lime is a crafty piece of fruit. Adaptable to any
number of situations, this little nugget’s useful as
a whole fruit, simply for its juice, its peel, or even
just its zest. This is a fruit that in its various forms,
provides endless opportunities for you to integrate
it into cooking, and drinks. Three lime varieties have
been used in this month’s gin: key lime, finger lime,
and desert lime, all of which provide unique flavours,
typically used for different purposes (the finger lime,
one of the key ingredients, is widely known as ‘citrus
caviar’, so if you need inspiration for something to
nibble on – there you go). But rather than make a
marmalade, a jam, or a chutney, the February gin has
taken the fruit’s bright, zesty flavour profile that’ll
lend itself to some rather tasty cocktail treats.

Pine Lime Splice
Fun fact: the Splice, that oh-so-very Australian “iced
confection” was thrust upon the world way back in 1962.
We’re celebrating this kind of indulgence by garnishing
our tropical, citrusy concoction with your favourite brand
of vanilla ice cream. There’s nothing quite like taking
something great and adding something extravagant to it to
improve it even further.
INGREDIENTS
• 60ml Keylime Gin
• 15ml Lime Juice
• 20ml Pineapple Juice
• 5ml Grenadine
• Vanilla Ice Cream
(Garnish)
Notes
RECIPE
1. Add Gin, lime juice and
pineapple to an icefilled
cocktail shaker.
2. Shake and dirty pour
into an old fashioned
glass.
3. Pour over grenadine
and Garnish

Old Navy Gimlet
British sailors earned the less-than-enviable nickname
“Limey” thanks to their wide use of limes after the lime’s
benefits in preventing scurvy. A few hundred years later, and
here we are, enjoying both gin (a navy staple) and lime
(useful scurvy remedy) all in the one place.
INGREDIENTS
• 60ml Keylime Gin
• 20ml Lime Cordial
• 5ml Lime Juice
• 5ml Lemon Juice
• 5ml Sugar Syrup
(Garnish)
RECIPE
1. Add all ingredients to
an ice-filled cocktail
shaker.
2. Shake and double
strain into a chilled
coupette.
