Ever had to rise to a challenge? How’s this for a challenge: ‘Make a citrus flavoured gin – without using citrus fruit’ One of the wonders associated with Western Australia’s wild botanicals is that they can contain scents and flavours that take you to unexpected places.
It’s an unforeseen destination to end up in, if you start with a native herb, and wind up with a citrus zing. To make this gin, we started with Juniper, of course. From there, we added some Spanish Coriander, Angelica, and Cinnamon Myrtle, then some Geraldton Wax, a dash of Lemon Myrtle, and a hint of Bush Basil. Somehow, it’s got all the citrus hints without the actual fruit itself.
Challenge accepted, and the results speak for themselves.


SIGNATURE SERVE
Soda with dehydrated lime


LONDON CALLING

INGREDIENTS
45ml Native Citrus
15ml Fino Sherry
10ml Lemon Juice
7.5ml Rich Sugar Syrup
2 Dashes Orange Bitters
GARNISH
Grapefruit Peel
METHOD
1.
Add all ingredients to an ice-filled cocktail shaker.
2.
Shake and double strain into a chilled Nick & Nora glass.
3.
Garnish with Grapefruit Peel.

ORANGE BLOSSOM SPECIAL


INGREDIENTS
45ml Natice Citrus
15ml Triple Sec Liqueur
45ml Orange Juice
15ml Lime Juice
5ml Grenadine
GARNISH
Orange Peel
METHOD
1.
Add all ingredients to an ice-filled cocktail shaker.
2.
Shake and strain into an old fashioned glass filled with ice.
3.
Garnish with orange peel
