Meyer Mojito
If you’ve never paid much heed to the importance of ratios, consider the Mojito. At its core, it’s two parts boozy, one part something sour, one part sweet and a measure of soda. Throw in a veritable bunch of mint and it all adds up to the kind of downright refreshing cocktail that leaves you feeling like you could be at a swim-up bar in a balmy tropical climate - exactly the vibe that our Meyer Lemon is made for. Now that’s tasty maths.
INGREDIENTS:
60ML MEYER LEMON GIN
15ML LEMON JUICE
15ML LIME JUICE
30ML SUGAR SYRUP
8-10 MINT LEAVES
SODA WATER
GARNISH: LEMON TWIST AND MINT SPRIG
METHOD:
1. Add all ingredients except soda to an empty highball.
2. Spank the mint.
3. Add crushed ice and churn with a long handled spoon.
4. Top with soda water and more crushed ice.
5. Garnish.
Lemon Tart Flip
The Flip is a classic cocktail that dates all the way back to the pioneer taverns of the 17th century and could easily be considered the original fireside cocktail. In the early days a red hot poker was used to create the trademark foam, but the modern version of The Flip is achieved with some variation containing booze, egg and sugar. Our Lemon Tart Flip is zesty and tangy, with a luxurious meringue mouthfeel and you should definitely be prepared to make more than one.
INGREDIENTS:
60ML MEYER LEMON GIN
10ML SUGAR SYRUP
5ML LEMON JUICE
1 TSPN LEMON CURD
1 DASH ANGOSTORA BITTERS
1 WHOLE EGG
GARNISH: GRATED WHITE CHOCOLATE OR DESICCATED COCONUT
METHOD:
1. Add all ingredients to an empty cocktail shaker and dry shake.
2. Add ice and shake again.
3. Strain into a chilled champagne flute.
4. Garnish.
