The warm days and balmy nights of the new year mark the beginning of the festival season and we thought it was about time these carnivals were given a gin of their very own! But how to capture the frivolity and merriment of a carnival in a gin? We took our minds on a delicious exploration down the food truck lane of our favourite festivals and there was one accompaniment that we just couldn’t shake. Popcorn. We replicated all of the buttery, salty and completely moreish characteristics of this snack in a gin to give you our downright scrumptious Carnival.



Signature Serve

Capi Grapefruit Soda and garnish with a grapefruit wedge.



Fairy Godmother

Ah, fairy floss! That sweet, sugary goodness which looks like a cloud and pretty much tastes like fun. Just like popcorn, it’s another carnival must-have, so of course we had to find a way to give it a little showtime. In our twist on a Seabreeze, the fairy floss will disappear into the liquid almost like a magic wand has been waved over your glass and you’ll be left with one delicious party of a cocktail.



60ML CARNIVAL GIN
30ML FRESH GRAPEFRUIT JUICE
30ML CRANBERRY JUICE
PINK FAIRY FLOSS
NO GARNISH

Place a small handful of fairy floss in the bottom of a chilled rocks glass.
Add remaining ingredients to an ice-filled cocktail shaker.
Shake well and strain over fairy floss.
Serve with a straw.



Fairground Collins

Anyone who’s devoured a box of deliciously buttery and lip-smackingly salty popcorn will know that it needs to be paired with a large, thirst-quenching beverage. Inspired by this idea, we sought out the tallest of the highball glasses and crafted you a brand new take on the Collins. It’s a simple combination of sweet, sour and refreshment - with a cheeky, little pop of Carnival flare. 



60ML CARNIVAL GIN
25ML LEMON JUICE
20ML BUTTERSCOTCH SYRUP
LEMONADE OR SODA
GARNISH: LEMON PEEL

Build first three ingredients in an ice-filled highball.
Top with lemonade or soda to sweetness preference and stir gently to combine.
Garnish.
