Bee’s Knees

When contemplating the origins of sayings, the phrase “bee’s knees” is certainly one of the most thought-provoking. Do bees actually have knees? Why would knees on bees be a good thing? Before embarking on this or any other of life’s great mysteries, make yourself one of these to keep you company. The combination of honey and lemon creates a rather sweet syrup that could just as easily be used in your tea. But we prefer it in gin.



60ML ORANGE & SAFFRON GIN
30ML LEMON JUICE
20ML HONEY SYRUP (EQUAL PARTS HOT WATER AND HONEY)
25ML ORANGE JUICE
GARNISH: LEMON TWIST

Combine all ingredients in an ice-filled cocktail shaker.
Shake well.
Strain into an ice-filled rocks glass.
Garnish.

60ML ORANGE & SAFFRON GIN
10ML SHERRY
SODA WATER
GARNISH: LEMON WEDGE

Stir gin and sherry together in an ice-filled highball glass.
Top with soda water.
Garnish.
