As the cooler, misty mornings of winter roll in, it becomes that little bit harder to get up and get going, and that classic morning greeting “rise and shine” starts to lose some of its appeal. Luckily we know just how to restore its lustre. We selected a single-origin bean from our fellow West Swan Road friends at Yahava, and carefully crafted our Rise & Shine gin to showcase those bold coffee flavours. We’ve kept the strength at 42% to give this gin a delicious vanilla undertone and a perfectly spicy finish. With a lively line-up like that, you’d be forgiven for wanting to drink this straight out of bed.

Top with Fever-Tree Indian Tonic and garnish with orange peel.



Affogato Martini

The Espresso Martini has everything one could possibly ask for in a cocktail: caffeine, alcohol and sugar. So safe to assume that it’s the pinnacle of extravagant martinis, right? Well, that was until our Affogato Martini arrived on the scene. We’ve removed all traces of vodka, added a scoop of ice cream and promoted our Rise & Shine gin to the starring role in this most decadent of martinis, designed to both awaken and dazzle your tastebuds.



50ML RISE AND SHINE GIN
15ML VANILLA SUGAR SYRUP
1 SCOOP COFFEE ICE-CREAM
10ML CHOCOLATE LIQUEUR
30ML ESPRESSO
GARNISH: 3 COFFEE BEANS

Layer the chocolate liqueur into a chilled coupette.
Place all other ingredients in a shaker with 3-4 ice cubes.
Shake vigorously.
Double strain into the glass and garnish.



Twist & Stout

As far as we’re concerned, the Negroni should be enjoyed year-round. But with Perth’s coldest and wettest season now underway, this classic cocktail is certainly in its element. Inspired by the exceptional local stouts that are released in this seasonal change, we set about to give the Negroni a daring twist. Pairing the coffee-forward notes and slightly spicy aftertaste of our vibrant Rise & Shine with the bitter chocolate character of Feral Brewing’s Boris Imperial Stout, this is a perfectly bold winter Negroni.



30ML RISE & SHINE GIN
30ML SWEET VERMOUTH
60ML STOUT*
GARNISH: DEHYDRATED ORANGE SLICE

Add all ingredients to an ice-filled old fashioned glass.
Stir for ten seconds to combine.
Garnish.

*If you can’t get your hands on Feral’s Boris Imperial Stout, opt for one with big coffee and caramel notes. If stout is on your no-drink list, replace with 30ml Campari and 15ml espresso.
