Affogato Martini

Ingredients
45ml Paris Gin
15ml vanilla sugar syrup
1 scoop coffee ice-cream
10ml chocolate liqueur
30ml espresso
Garnish: 3 coffee beans
Method
Layer the chocolate liqueur into a chilled coupette.
Place all other ingredients in a shaker with 3-4 ice cubes.
Shake vigorously.
Double strain into your glass and garnish with 3 coffee beans - no more, no less!
Parisian Amaretto Sour

Ingredients
45ml Paris Gin
15ml Amaretto
15ml Lemon Juice
10ml Sugar Syrup
Egg White/ Wonderfoam
Garnish: Orange Slice and Cocoa Powder dusting
Method
Add all ingredients to a shaker and dry shake (no ice) for 10 seconds.
Add ice and shake hard for 10–12 seconds.
Fine strain into an ice-filled rocks glass.
Garnish with an orange slice and a dusting of cocoa powder.
