Method:
Pot & Vapour

Key botanicals:
Juniper, Aniseed, Fennel, Hibiscus, Orange, Blood Orange and Date

Signature Serve:
30ml Cairo Gin served over ice with Fever-Tree Mediterranean Tonic. Garnish with Hibiscus or Rose Petal.

Hibiscus Sour

Ingredients
40ml Cairo Gin
25ml Lemon Juice
15ml Hibiscus Syrup (or tea - add 10ml simple syrup if using tea)
10ml Egg White (or Wonderfoam)

Method
Dry shake. Add all ingredients to a shaker (no ice) and shake hard for 10 seconds to build foam. Wet shake. Add ice and shake again for 10 seconds until well chilled.
Strain into a chilled coupe glass. Garnish with a Hibiscus or Rose Petal.


Hibi Old Fashioned

Ingredients
50ml Cairo Gin
1 Bar Spoon Date Syrup
2 Dashes Angostura Bitters
1 Dash Cardamom Bitters

Method
Add the Date Syrup and Bitters to a mixing glass.
Slowly pour in the Gin and stir briefly to combine and loosen the syrup.
Strain into a Rocks glass filled with 1 large ice cube. Garnish with an Orange Peel Twist.
