Colombo is a port city shaped by centuries of trade between east and west. Set between ocean, jungle and mountains, it moves at a gentler pace than Bangkok. We were drawn to the historical significance, endless variations and quiet rituals of tea, so central to life in Sri Lanka. A daily pause that reflects the country’s considered rhythm.

Method:
Pot & Vapour

Key botanicals:
Ceylon tea, curry leaves, lemongrass, anardana seeds, nutmeg, curry powder, cinnamon

Distiller:
Aled

Signature Serve:
30ml Colombo Gin served over ice with Ginger Beer. Garnish with a Wedge Of Lime and a Cinnamon Stick.

Ingredients
30ml Colombo Gin
20ml Dry Vermouth
20ml Sweet Vermouth
10ml Grand Marnier (or Cointreau)
20ml Fresh Orange Juice
Dash of Orange Bitters


Method
Add all ingredients to cocktail shaker, add ice and shake. Double strain into chilled coupe glass. Express Orange Twist over cocktail and use as garnish.


Hard Iced Tea

Ingredients
45ml Colombo Gin
45ml Earl Grey Tea
15ml Fresh Lemon Juice
80ml Lemon Iced Tea

Method
Add all ingredients to wine glass. Add ice and stir until chilled.
