Alchemy is the medieval chemical science and philosophy of changing base metals into gold. Basically, taking one thing, and through chemistry, turning it into something completely different. We wanted to create a citrus gin using native herbs from the kitchen garden rather than with citrus fruit. This was a challenge – like making a thick shake without milk. How exactly *DO* you replicate citrus’ qualities without fruit? It’s gin, so you start with Juniper, of course. From there, try some Spanish Coriander, Angelica, and Cinnamon Myrtle, then add some Geraldton Wax, a dash of Lemon Myrtle, and a hint of Bush Basil.
