In the UK, the Christmas gin is always a sloe gin. Sloes come into season in Autumn and are picked and rested in the gin for Christmas. Sloes really only grow in Tasmania in June, so they aren't suitable for a WA Christmas gin. Cherries are the perfect replacement because they are a stone fruit in season at the right time and they are already associated with Christmas.

Juniper, Coriander, Orris, Sage, Thyme, Rosemary, Cinnamon, Ginger, Clove, Nutmeg, Orange, Black Pepper, Cherries.

Fun Fact:
In the UK, the Christmas gin is traditionally a sloe gin. Sloes come into season in the autumn over there and they would be picked after the first frost to be rested in gin ready for Christmas. But in Australia, sloes really only grow in Tasmania in June, so they aren't suitable for a WA Christmas gin. Cherries are the perfect replacement because they are a stone fruit in season at the right time – plus they are already associated with Christmas.
