When Mother Nature delivered the mother-lode of Lilly Pillies from our distillery tree, we knew only an Old Tom gin would provide the sweetness to balance out the tartness of those berries. We’ve chosen lemon, orange and grapefruit for the base whilst keeping the strength slightly lower to showcase both the floral and the citrus notes of the gin. Pair with Fever-Tree Indian Tonic and garnish with a mint sprig to allow the surprising characteristics of our Lilly Pilly Old Tom to shine through.

Old Tom is a style of gin that originated in the early 1700s. It involved adding sugar to hide the taste of poor quality gin - and when we say poor quality gin, we mean that calling it gin is almost being too generous.
